Balsamic Rosemary Chicken, Mozzarella Zucchini and Shallot Green Beans

This is the first time I’ve had chicken in months, it tasted pretty amazing. I only wish that I wasn’t rushing to get out the door. I should’ve started cooking earlier. I have to say though that it was a pretty quick meal to cook anyways. I started cooking around 5:40 after saying good bye to the kiddos and was out the door at 6:20.

Balsamic Rosemary Chicken



Start with however many chicken breasts that will feed your family. Pat them dry, sprinkle on some fresh rosemary (minced), salt, pepper, garlic powder (or minced garlic if you’re not crunched for time). Drizzle with olive oil. Bake in the oven at 450 degrees for about 10 – 15 minutes. When it’s cooked through drizzle some balsamic vinegar over it.



Shallot Green Beans

This honestly is my favorite green beans recipe. Slice a couple shallots and throw them in a preheated pan over medium-high heat with some olive oil. Season with salt to draw the liquids out and caramelize them. I like them all browned on the edges, deeper than the picture below. When you get it how you like it, throw in some frozen green beans, or some fresh blanched ones. (I don’t think canned will work that well as you’d basically have a bunch of mush when you’re done.) Season with salt and some garlic powder (or minced garlic). Keep moving them around the pan until they are thawed and to the tenderness of your liking. Sometimes I even like them to get a little brown and caramelized on a side or two. The shallots really add something to it. So yummy!



Mozzarella Zucchini

I sliced the zucchini in 1/4″ thick pieces. You can go thinner if you want. Coat the baking sheet with cooking spray, lay the zucchini on it, sprinkle some salt on it. Give it another spray of oil, then layer on the mozzarella. I put it in the oven with the chicken for the last 5 minutes. The cheese will melt. When the chicken’s done, turn on the broiler and put the zucchini right under it to brown the cheese.



The second day of the South Beach Diet is going pretty well. I had a mushroom and asparagus omelet (well it was supposed to be an omelette – but it just turned out like scrambled eggs. I need to get a teflon skillet), and I had a salad for lunch with turkey lunch meat, hardboiled egg, tomato, cheese, sunflower seeds and balsamic vinaigrette. Snacks were reduced fat cheese sticks and almonds.


Weight Loss and the South Beach Diet – Phase one


I haven’t really lost any weight since October last year. I was doing weight watchers, and I’m thankful that I was able to lose 50 pounds while on it. But after a while it just sucks to have to enter every food that you eat into your phone. Especially when I cook so much at home, to enter the recipe in the recipe builder every time I tried a new recipe (which was frequently) was more than I wanted to do. I also have become a bit more aware of all the nasty stuff in a lot of foods lots of artificial, yes, FDA approved, but really unhealthy things. I especially am a bit concerned with the low-fat foods which add more sugar and other additives to make it taste good.

My husband started the South Beach Diet a couple weeks before Great Lent during the week that was fast free. He’s lost almost 20 pounds so far, and hasn’t exercised as much as he used to. So now that this week is fast free, I’m starting the same thing. I always thought the South Beach Diet was a bit daunting, but since I saw him do it, I feel it’s more doable. The thing that I’m dreading the most is the lack of bread for the first two weeks. I looooove bread! Hopefully I can get a jump start on my weight loss again. I have another 35-40 pounds to go. I guess I’ll see what I look like when I get there. I’m still considered overweight, but no longer obese.

I started at 231 after my second daughter was born, and now I’m at 178 pounds. My goal is around 145 pounds. I was a size 18/20 and I just bought a new pair of pants today, a size 10. It’s so awesome. I’ve never been that size before in my entire life.


This is my grocery shopping trip for this week. Lots of cheese, milk, yogurt, veggies. I’m so excited for dairy!

Car troubles

I was so excited to work out tonight. I got everybody in the car and then it wouldn’t start. Recently we’ve had corrosion on one of the battery connector thingies. 😀 I have no idea what they’re called. So I tried to scrape it off and take the connector thing off, but the bolt was stuck to the screw and I was basically stripping it by trying to get it off. So after 20 minutes I realized that I wasn’t going anywhere, had a good cry and went back inside with my one year old. Thankfully my three year old who hadn’t had a nap today was sleeping in the car. I tried to workout in our family room to insanity. I think it went pretty well except for the fact that my daughter thought it was fun to run through my legs when doing squats and crawling under me when doing push-ups.

Weight Loss

I was looking through my wallet and saw my drivers license. The picture was taken 12 months ago – when I was 6 months pregnant.


I just took this one about 10 minutes ago.

I’ve lost 40 pounds which is basically half way to my goal. i started actively losing weight in January. I have been using weight watchers and going to the YMCA every day except Saturdays and Sundays. I’ve never lost this much weight before. I’ve always been overweight… So I’m pretty jazzed about this.
