This is my harvest from the garden today. My cherry tomato plant has been doing really well. I did select an indeterminate type. I have four other tomato plants and two have some that are ripening. I planted some determinate plants as well. Two of the plants are basically falling over with their cages.
I planted some basil … A lot of it actually but only one plant survived. Maybe next year I’ll do better at transplanting. So I was surprised because last year I also planted basil but it never really did very well.
I’m assuming what attacked the tomatoes were birds. They weren’t even very ripe. 😔
I did rescue two cherry tomatoes before they were eaten.
I started some seeds today using some of Jiffy’s Organic Seed Starting Mix. I had been saving my egg cartons for someday when we have chickens and live on a farm. But I realized recently that that probably won’t happen for another 20-30 years, so hey, I’ll use them for seed starting.
After starting I realized that I should have used warm water to moisten the soil, so I switched to that in the middle. I don’t have a heating mat, so I’m guessing that that will help it along a little bit. I started strawberries, beefsteak tomatoes, roma tomatoes, cherry tomatoes, and pink brandywine tomatoes, lavender, chives, lettuce, nasturtiums, petunias, and marigolds. It is a little early to be planting the flowers, but they are old seeds and I don’t know if they’ll come up. Hopefully the flowers will help with the nasty bug population by attracting good predator bugs.
While I was planting, one of my daughters knocked over the cup of water that I was using to moisten the soil. It got all over the rest of the seed packets. I set them all out to dry, hopefully it’s not screwed up.
I made spaghetti tonight. It’s kind of impressive that I don’t think I’ve made any spaghetti until now in the Great Fast. I think I’ve been doing pretty good with variety of foods.
I used whole wheat spaghetti noodles, and I made my own sauce. I had some that I had canned from last years tomatoes, and some canned tomatoes in water. I used some of my homemade spaghetti sauce and drained some of the tomatoes. First I sauteed some mushrooms, added some salt and garlic. I added the drained tomatoes to get them to break down faster. It got boiling pretty fast. I added some dried oregano and basil. I added some spaghetti sauce in hopes of making it thicker, then I remembered I had some tomato paste in the refrigerator, so I used some of that. I added some chopped fresh parsley and about a tablespoon of nutritional yeast. I think it turned out really well for having had no specific recipe I was working from.
The zucchini rounds, I wanted to be more like chips, but it didn’t turn out that way. I had the oven at 450* F. I used a mandolin to slice them evenly the smallest thickness available. I used some cooking spray on the cookie sheet and laid out the slices, sprinkled them with salt (and at this point I would usually grate some parmesan cheese over the top, but not during the Fast), sprayed them with cooking spray on the top and stuck them in the oven. I had two sheets, I wasn’t being very attentive and the bottom one burned. Oops.
In addition to this we had a salad and cantaloupe. You know we have to get our fruits and more veggies! 😀
